If there were two people I'd like to sit next to and simply watch them colour stuff it'd be Steve Firchow and Peter Steigerwald...
But since I can't do that, all I can do is try to emmulate them through colour studies such as with this one, which is unashamedly a copy (as best I can do) of the original colours to Batman 700 by Peter S. The way he got the texture/feel of the cape was just awesome...mine of course is not... Plus this has got to be a serious benchmark drawing/cover for Batman IMO... David Finch just aced it.
